Our recipes are developed for you to get the best out of our bacons and hams.

Yummy, easy to do with great flavour and are sure to impress your friends and family.

Many have been developed to be easy for kids to do and get involved in the kitchen.

Christmas Hams


Our factory shop has 1/2 and whole gluten free hams available for your Christmas table.

We also have a wonderful selection of streaky and middle bacon available that is chemical and preservative free all rear round.

Our bacon has no added water and this makes it easier to cook with with better results. It crisps up like a dream.

How glaze a ham

Carefully remove the skin by running your clean fingers under the skin and peel back and remove to leave a smooth layer of fat. With a sharp knife lightly cut the layer of fat into a crisscross pattern. Take care not to cut into the meat.

Secure pineapple pieces and or cloves and cherries if you are using then. Spread over your preferred glaze and place on a rack in a large roasting pan.

To glaze and serve cold - bake at 175C for 35-40 minutes, brushing occasionally with the glaze. Cool, cover and store in refrigerator until served.

To glaze and serve hot - cook at 160C, allowing 20 minutes per kilogram, brushing occasionally, about every ten minutes with the glaze.

Hint: As our hams have much lower levels of water that you generally get with other hams they will glaze, cook off faster.

Ham Glaze recipes


Honey and Brown Sugar Ham Glaze

2/3 cup brown sugar
3 tablespoons honey
1 tablespoon Dijon mustard

Orange Glaze

1 cup orange juice
3/4 cup brown sugar
1 tablespoon Dijon mustard
1/2 cup honey
2 tablespoons Grand Marnier (optional)

Maple Glaze

1 tablespoon mustard
2/3 cup maple syrup

Brown Sugar Glaze

1 1/2 cups brown sugar
1 1/2 teaspoons dry mustard powder
3/4 teaspoons ground cloves

Pineapple Glaze

1 1/2 teaspoons dry mustard
1 1/2 cups brown sugar
3/4 cup well drained crushed pineapple

Ginger Glaze

1 teaspoon dry ginger
1 teaspoon dry mustard
1 1/2 cups brown sugar
peach syrup from a can to make a thick paste
1 teaspoon fresh lemon juice

Chili Glaze

1/2 cup thick chili sauce
1/4 cup corn syrup

For all of the above ham glazes mix the ingredients together in a bowl and brush over the ham. As the ham cooks, occasionally brush it with the extra glaze.
